Can you tell me where I can find more info on how you are making the Popup - NEWSLETTER SUBSCRIBE work? Can I feed this data back to Sendinblue or Mailchimp? Can I add more fields like mobile for later SMS marketing?

we are using mailchimp for popup, you can add widget mailchimp on appearance > widgets > popup newletter to show mailchimp form.
About sms field, I think you can add the field on mailchimp form to get number of customer.

You can change it on appearance > theme options > popup newletter.
